Second instance of Seerr

Currently, Seerr does not support authentication from both Plex and Jellyfin at the same time. I have users who prefer each for different reasons, and I use both of them in different situations myself.

My request is for a second instance of Seerr, similar to Radarr and Sonarr, to support both media servers.
